- Every year, for New Year’s Eve, I make pimento cheese. This year is no different. Giardinera, Calabrian chili, peperoncini, Duke’s mayo, gas station cheddar.

- Okay, have a little #TodaysTea action this morning — a Tieguanyin from Anxi, Fujian. Gorgeous rolled leaves, more brown than green. Raisins, lilac, honey and a hint of toasty caramel at the back. Steeps 3-6 were aces; earlier steeps a touch brackish, later a bit meh.
- Pulled! Now we wait a good half-hour until service.
- Also, a veal demi / chanterelles / green peppercorn pan sauce.
- Not gonna peek but the rib roast is getting a lot of smoke at the moment.
- So @beckybowers.bsky.social is making a Swedish potato dish with sprats (!) and the construction is just lovely. Also, some black pepper fantails.

- Here is @beckybowers.bsky.social with her butter sheets for bear claws. That’s our third project IIRC. Also coming: Melissa Weller fantails, a Swedish sprat and potato dish, and a very nice persimmon + fennel salad.
- Today, we begin. First up: This colossal three-bone rib roast. Time to air out for about 48 hours.
- Looks like the FIRST thing I am doing on Christmas break is fixing the broken python environment on my desktop. We'll be setting up pyenv and UV. Pray for me to whatever eldritch deity oversees my .zshrc
- Definitely going to celebrate a little time off by installing some Linux(es) because who doesn't want to get some configs wrong and mess up their ZFS installation across a hardware RAID over a holiday week.
- Done and done. Worth every penny.
- Staying in my lane: Did some more #HotelCooking tonight — Quick arugula salad with mushrooms; brie and (out of frame) Schwartzbrot from Zeit für Brot, and a pile of mandarins and blackberries. Dessert is this ridiculous pistachio cinnamon roll from Sammy's Berliner, the pride of Sophienstrasse.
- Now that the girls make their own ponytails, I don't make cocktails, and I don't cover elections, I've had a hard time figuring out a social media lane. But I think I've got it figured out: Cooking in hotel kitchens on work trips, viz, tonight's "I am hungry and tired" Rewe soup.
