- Came back from a two-week holiday on mainland Europe, visiting friends in Germany and Austria and going back home to the UK via Paris. I'll be writing up some reflections on it soon but meanwhile here's a thread with the most delicious #veganfood I ate...
- Still buzzing from Vegan Campout so decided to try one of my free goodies from the festival for lunch. Got this as a gift from The Vegan Society after signing up as a member. Delicious & quick miso noodle soup! Topped with carrot, kale & cashews. Will definitely be making this again🤤 #veganfood 🍜
- Coming home from Vegan Campout and not sure what I'll be cooking tonight. It's been a fantastic weekend with lots of delicious food 🤤 My highlights include gelato (of course!), Caribbean chickpea and spinach curry with the BEST fried plantain and a mix of #vegan Chinese food! #veganfood 🍜
- When you find a pub that does good vegan pizzas... Heaven! Vegan cheese, caramelized red onion chutney, rocket. Freshly baked! #veganfood 🍜
- Made a tofu scramble with fresh tomatoes from the garden 🌱 for lunch! Could eat this for lunch every day.. #veganfood 🍜
- Last evening of our long weekend camping trip... Made a one pot "pilau" dish. A mix of brown rice, carrots, onion, petit pois, dried apricots and vegan chicken pieces. Stirfry veggies, add rice and vegetable stock, boil for 20min. Perfect for the campsite but easy to make at home too! #veganfood 🍜
- Holiday mode activated! Chili sin carne on the campsite. Simple, quick and delicious! 🤤 #veganfood 🍜
- A bit of everything. I have been experimenting with a spinach stirfry in the last week. Fry tofu with onion, garlic and ginger, add soy sauce and defrosted spinach blocks for a quick side dish. Here served with leftover ve chorizo sausages, tomatoes, broccoli and airfryer potatoes #veganfood 🍜
- Made another katsu tofu today. This time with fresh broccoli 🥦 from the garden!!🌱 So delicious. It's so fresh it literally only needs 2min to cook. I've also started a second batch of broccoli seedlings for a late summer / autumn harvest 💚 #veganfood 🍜
- The good thing about making lasagna is that it makes for a quick weekday meal. I always double up on the red sauce so I have extras for a quick pasta later on. It's filled with veggies too: carrots, pepper, leek, tomatoes, onions. Served with some fresh cherry tomatoes from the garden 🌱 #veganfood 🍜
- Lasagna today because I was in need of comfort food. I used whole wheat lasagna sheets to make it healthy. Also put the oven a tad too hot. I find cutting vegetables soothing so took my time w/ the red sauce. My partner now makes the best bechamel sauce so it's teamwork on display here! #veganfood 🍜
- I love broccoli. It's hands down my favourite vegetable. I often put more broccoli in a dish than others would.. but the result is almost always a delicious dish. Broccoli never disappoints! 🥦🍜 #veganfood
- ❤️ a salad on hot summer evenings. Mixed up my usual couscous salad & used wholewheat penne instead. Mixed w. pointed peppers, petit pois, tofu, chickpeas, raisins & tomatoes. Drizzle with olive oil, lemon juice, Mediterranean dried herbs, fresh pepper & salt. Serve w optional coriander #veganfood 🍜
- Easy weekday dinner: curry spiced baked potatoes (20min in airfryer at 190°C), simple mix of broccoli (boil 3min) and tomatoes, serving with your #plantbased protein of choice. This time it's a @beyondmeatofficial.bsky.social burger as a little treat. Quick, easy, delicious #veganfood 🍜🍽️

- Five ingredients recipe! One of my favourite quick meals: potatoes stirfried with #plantbased shawarma (or black / red kidney beans - depending on my mood), red onion, broccoli & tomatoes. Simple seasoning of salt, black pepper, chili flakes and some ketjap manis sauce towards the end #veganfood 🍜🍽️
- I harvested my first cavolo nero kale today from the garden 🌱 so pleased it's growing well! Stirfried with some garlic and chili oils, served alongside a rice mix of beans, sweetcorn, peas, salsa, #vegan mince, and some melted ve cheese. Very delicious! #veganfood 🍜
- Who has tried the new THIS Superfood already? I read mixed reviews on #vegan forums. I must say, it did not disappoint! A great addition to #plantbased #protein choices. Blended perfectly into a curry but kept its own distinct flavour without being too overpowering. Will try it again! #veganfood 🍜🍽️
- I have been making this katsu style meal lately, using the Tofoo Katsu pieces. They're fantastic pieces of tofu coated in katsu spices and breadcrumbs. Serve with a vegetable stir fry of your choice, brown rice and katsu sauce. Now to learn how to make the sauce myself! #veganfood 🍜🍽️
- Happy summer everyone! Here's to many more meals in the garden, surrounded by wildflowers, bees and birds. Pictured is my quick tortellini for the humans, and a mix of seeds on offer for the birds in the background, with the neighbourhood pigeon joining us for dinner #veganfood 🍜🍽️
- The best part of summer? Picnics in the park with friends! Chana dahl and onion bahjis from a new local vendor in Stevenage made for a fantastic dinner this week. These bahjis were so tasty -- I need to learn how to make my own! #veganfood 🍜🍽️
- I'm constantly trying new #plantbased meat substitutes as they're a really easy introduction to #veganfood for friends and family. This weekend we tried the Juicy Marbles meat and my gosh was it tasty. And it's all plants!! Served with grilled asparagus and roasted potatoes. A fantastic meal! 🍜🍽️
- I won the #vegan jackpot yesterday. Our annual town's celebration finally had a vegan vendor! Needless to say I just HAD to go and support them. Blueberry, chocolate orange, lemon poppyseed and carrot cake muffins. I promise I shared the joy with others! #veganfood
