- Light ferment shou releases are up. We pressed these in 2022 and aged them til now. The higher-end stuff has the smoothness of shou coupled with aged raw character lingering in the backdrop

- Use a tea needle/pick and pick around the perimeter when it is lying flat. Make holes about 1.5 cm apart around the whole brick and repeat until you can split the brick into two big flat pieces. That’ll make breaking it further a lot better. Alternatively you can find the nearest ice agents face and
