- We have a tradition that every year when we have our first snow I make this cake in my Bundt pan that is shaped like a ring of trees, then give it a dusting of powdered sugar “snow”.

- I love roasting, not simmering, squash for soup. You get such depth of flavor from the caramelization in the oven. This recipe is basically what I do except with onion instead of shallot and different spices: cookieandkate.com/roasted-butt...
- I make the soup very mild because I'll use the leftovers for something else the next day like tofu katsu curry. So since it's so simple I like to add spicy, crunchy chickpeas. I tossed a drained can with salt and berber spice and roasted at 425 for 20ish minutes. www.allrecipes.com/recipe/25586...
- Another chilly Vermont night classic: fresh, warm cider donuts! These are baked and then brushed with melted butter and tossed in crunchy cinnamon sugar. SO GOOD. 🍎

- Earlier this month our wonderful cat Fergus passed away, so in our grief and stress we let things slip a bit and I found myself one night with no groceries to cook with except tofu and cabbage. 😩 I felt pretty hopeless in that moment but ended up finding this recipe that was surprisingly good!

- This is going into our fall dessert rotation. It’s another hit from Cooks and it’s like a thin apple crisp on a shortbread base. We had it with breyer’s oat milk ice cream. Incredible!

- Personally I’m not comfortable referring to vegan food as “cruelty free”. Yes, we’re doing what we can to minimize harm to animals but we can talk about that without using terms that erase other cruelties throughout the food system. 💔

- My parents gave us some beautiful ripe tomatoes from their garden and I didn’t want to obscure their incredible flavor, so I just roughly chopped them and cooked very briefly with some garlic, S&P, mushrooms, butter beans, and a touch of dry herbs. Simple and perfect. 🍅

- And then next next I did my favorite leftover meal: day-after-tacos fried rice. I just pan fry fresh corn, broccoli, cabbage, peas, whatever other veggies I want with the leftover rice and salsa + spices and top with the leftover beans!
